In my haste to get the pictures uploaded, I by accident permanently deleted all of the pics of me making the scrumptious Pumpkin Crunch...except this one! (Yikes...I got a new camera...more on that later. Who says pictures are worth a thousand words?
But I promise you, you must make this recipe for your next family gathering, supper club, bible study or other large gathering. It makes one huge pan (9x17). But honestly, we had 6 adults over for game night (including Chip and I) and we finished that bad boy off no problem! But we are a little obsessed when it comes to desserts!
Pumpkin Crunch
3 eggs
1 Cup Sugar
1 Can Evaporated Milk (12oz)
1 Can Pumpkin (15oz)
2 tsp. Pumpkin Pie Spice
1 Yellow Cake Mix
1.5 sticks of butter, melted.
Combine eggs, sugar, milk, pumpkin pie spices and can pumpkin blending well. (I used a whisk!). Pour in a 9x13 inch baking dish that has been sprayed. Sprinkle yellow cake mix on top (if you don't always have a yellow cake mix in your pantry...you need to start!). Drizzle melted butter on top!
Bake at 350 for 40-45 min. (mine took a bit longer...I used a tooth pick...insert the toothpick in the middle and when it comes out clean...it is done!) Serve with fresh whip cream.

So back to my picture taking fiasco! I recently got a new camera, the Cannon Rebel XS. I love it because even in the automatic mode it takes way better pictures than my old point and shoot (no offense to my old Sony Cyper Shot).
But I have been learning to play around with my settings, making my pics look even better! I am following Darcy's 31 Days to a Better Photo. Alas, I am only on Day 3, but I am making progress!
