Peanut Butter Oatmeal Chocolate Chip Cookies

Whew!  That is a long name for a cookie but I PROMISE you...these are the best ever!  (Do I say that about everything?)  Would it be gross if I used the word "meaty" to describe them?  Coming from a girl that doesn't really eat meat...I guess that is just wrong on so many levels.  But they are really meaty dense and oh so divine!
There is nothing too noteworthy about following this simple recipe.  I guess that is why I like them.  Just simple and yummy.
Simply cream together the sugar, brown sugar, salt, eggs, vanilla.....

and then the best part...the peanut butter!
BTW, do you love my new heart measuring cups?  Me too.  I got them from the dollar bin at Target.  Yep, hurry on over and get you some! Except they were not actually a $1, they were $2.50 but still pretty good.

Then you add the flour and baking soda.  Then the oatmeal. Beat until just mixed and fold in the chocolate chips.

Once the dough is mixed, drop by rounded tablespoon onto ungreased cookie sheet.  Because there is very little flour in this recipe the chocolate chips will want to fall out of the mixture to the bottom of your bowl.  You will need to constantly be picking up chocolate chips and pressing them into each cookie as you go.  The extra work will be worth it. Promise.

Peanut Butter Oatmeal Chocolate Chip Cookies             
Recipe Adapted from "A Taste of Grace" cookbook (my parent's church in Maryland)

1/2 cup White Sugar                                  1 tsp. Baking Soda
1 cup Brown Sugar                                    1 1/2 Cups Peanut Butter
2 Eggs                                                       2 Cups Oatmeal
1 tsp Vanilla                                              1/2 Cup Flour
                                                                 1 Cup Chocolate Chips

Preheat Oven to 350 degrees.
Cream together sugar, brown sugar, eggs, vanilla, baking soda and peanut butter.  Mix flour and then oatmeal.  Lastly, fold in chocolate chips.

Spoon onto ungreased cookie sheet and bake for 7-10 minutes.  (My cookies were done at about 6 min.)

PS - Thank you to my friend Becka for setting me straight on how to take better indoor pictures at night-time.  Hopefully this will be my last post with really dark pictures!!!  Who knew all I had to do was change the White Balance on my camera to Tungsten?  Clearly not me.

  1. This is alot like a recipe I have. Can't wait to make these. We're about to get another 8 inches of snow so these will be really, really yummy while we're snowed in!
