Thankfully the Sesame Noodles are easy to make thanks to The Pioneer Woman. But finding the right Buckeye recipe? And actually mastering the art of covering them with chocolate? Now that is another story.
Here are the naked Buckeyes, ie.all of the sugary peanut buttery taste but none of the chocolate coating.
And here is the chocolate. The latest recipe I tried said to melt 12oz of chocolate chips and to dip said naked Buckeyes into said melted chips.
But my chocolate is always way too lumpy and thick. No matter how long I heat it up for, it always turns out lumpy.
Best-case scenario is that they end up turning out like this one....kinda more like a truffle. But buckeyes need to be smooth and round.
Worst-case scenario (which happens most often) is what I like to call "Man Down!" Man Down is the technical term for losing your ball of peanut butter in a vast sea of chocolate. My pretty little naked buckeyes get all weighted down by the chocolate and fall off the tooth pick.
And by the time I try to fish said buckeye out, it is too late. It gets lost forever in the lumpy all beit tasty chocolate.

Hey girl - my buckeye recipe calls for melted parafin wax mixed in with the chocolate. In fact, most recipes I've seen call for this. I'll find my recipe and send you an email. Don't get grossed out at the thought of wax - it's "food grade", whatever that means...
