Lumpy Chocolate Take Two.....Red Velvet Cake Truffles

I know the words lumpy and chocolate don't sound too appealing...but Cake Truffles? Need I say more.

There has been such hype around these Cake Balls Truffles and I have been dying to try them.  Bakerella has a ton of recipes and ideas.  I used her Red Velvet Cake Truffle recipe as a jumping off point for mine.

AND I decided it would be a good chance to work on my chocolate dipping skills...you remember what happened last time?  Things can only get better from here I figured.  And they did...

The recipe made about 50 truffles but you would have thought my child was deprived.  "Sister" (a nick name for my daughter) got upset with me when I put aside 4 truffles to give to a friend.  Really?
So delicious.  The cake was really moist kinda opposite from how I thought it would taste.


Start with any Red Velvet Cake mix and a can of cream cheese frosting.


Prepare and bake the cake according to directions on the back of the box for a 9x13 pan.



After you bake the cake let it cool completely. Ready to get messy?  Use your hands to crumple up with cake and mix it with the can of frosting.


Don't be afraid to get your hands dirty. This would also be a great job for the pre-schooler in your life that loves to play in the dirt...at least this is edible!

After you mix the frosting with the cake go ahead and form the "dough" into balls.


Rolling the cake dough into balls is time consuming. Be patient! It's worth it!

After rolling them into balls, go ahead and put the entire cookie sheet into the freezer for at least 1 hour.

Here is where I tried something new. Instead of melting chocolate chips to use as my coating (like I did with my buckeyes) I took Bridget's advice and I used candy melts AND added a bit of crisco.


Just follow directions on the back of the candy melts (you can get them at the craft store) and add a dab of crisco to each of your batches.  I microwaved my chocolate in 30 sec increments and then dipped! 


Then I got a little C-R-A-Z-Y and used pink candy melts to add a little doodle.


Don't feel like you have to be all perfect and artistic. I am not. No one has ever complained.

Red Velvet Cake Truffles
(recipe first adapted from Bakerella and then from Bake at 350)

1 Box of Red Velvet Cake Mix (follow directions to on box to make cake)
1 Container of Cream Cheese Frosting
1.5 bag candy melts
1/2 tsp of crisco per melted batch of chocolate
1/2 bag of pink candy melts (optional)

Enjoy!  Wouldn't these be cute for Valentine's Day?
